Epcot day @ home
Thank you to everyone who followed along on our Epcot/Flower & Garden "trip"! It was seriously so much fun and filled the entire day with yummy food and great memories!
With a bit of planning and effort you can have an Epcot day at home too! To start you are going to need a festival passport, I recreated the ones I made in to a printable for you guys! Each page is a 4x6. For the sticker page, if you do not have sticker paper just print on regular paper and use double sided tape. I used a hole punch and ribbon but you can staple the pages together as well. Basically just use whatever you have :)
Now that you have the passports it's time to outfit plan! Just because we are at home doesn't mean we can't look cute!
Aside from cooking and eating yummy food we also visited a local park that has beautiful flowers and murals to give us just a taste of Flower and Garden. If you do go to a park bring a mask and remember all the social distancing rules.
Ok, let's talk food! None of these are actual Epcot recipes, I basically just winged it BUT it all so yummy!
So I don't know about you but I start every park day with coffee, and for some reason I always want a frap while in Disney. Here is my easy at home frap recipe-
I used a single serving Bullet blender so you might have to do a little guessing if you are using a normal blender.
I put 2 tablespoons instant coffee 2 tablespoons sugar, half cup vanilla almond creamer, a lot of ice and fill to the top with vanilla unsweetened almond milk. Blend, top with whipped cream and enjoy!
We started in Mexico with pork al pastor tacos, street corn and guac!
Tacos- Soft taco shells, ground pork, taco seasoning, red onion, crushed pineapple, sour cream, garlic, limes.
Chop up some red onion. Heat some olive oil in a pan and cook the red onion until soft. Then add the ground pork, cook until browned. Stir in taco seasoning as directed. Then add some pineapple (I just guessed on how much, maybe half a can).
Mix a couple table spoons of sour cream with some freshly squeezed lime juice and finely chopped garlic. (Add some lime zest if you have a zester)
Fill taco shell with the pork, top with some crushed pineapple and a drizzle of lime crema.
Street corn- Bag of frozen corn, taco seasoning, crushed red pepper, mayonnaise and parmesan cheese. (Literally not an official recipe at all lol)
Cook the corn in a pan. Add some taco seasoning (eye ball it, don't over season). Add some crushed red pepper to taste. Stir in mayonnaise (1-2 table spoons). Sprinkle in some parmesan cheese.
Guacamole- Avocado, red onion, tomatoes, salt, pepper, garlic powder and lime.
Mash up the avocado and add some chopped up onion and tomatoes. Add garlic powder (I have no idea how much, sorry! Just a good sprinkle I guess). Add salt and pepper to taste.
Then we are off to Norway and then China!
For China all the food is from Trader Joe's frozen section! SO EASY!
Ok, now that we just ate a delicious meal from China let's go to Germany for some caramel popcorn!
So I have to admit, I found a recipe online and thought I had all of the ingredients...it turned out I only have 2 out of 4 hahaha! I am happy to report that apparently you really only need 2 ingredients to make the caramel!
Pop your popcorn first, I just used 2 bags of microwave popcorn.
In a pan melt 2 cups of butter. Once the butter is melted add 1 cup of lite brown sugar (pack it down). Stir in the sugar and bring to a boil. Let it boil with out stirring for 5 minutes. I stirred it once after that.
Then spread the popcorn out of a cookie sheet and then used a spoon to drizzle the caramel on the popcorn. Wait a few minutes for the caramel to harden. Done!
Off to the good ole US of A for some funnel cake blueberry sundaes!
What you need- fried dough, vanilla ice cream, blueberries, lemon, sugar, whipped cream
This one was the one I hacked the most lol. So we don't have a deep fryer and was too tired to try any make funnel cake on the stove SO I ordered sugar donuts from a Chinese restaurant hahaha. These sugar donuts taste just like fried dough. Anyways so now you have the fried dough.
Time to make the blueberry sauce! I totally winged this but basically I added a handful or so of blueberries, a little water and maybe 1/4 cup of sugar in a pan and brought that to a boil. Keep stirring it so it doesn't burn. I added some lemon and lemon zest and cooked it until it looked like a sauce.
Plate the fried dough, top it with vanilla ice. Drizzle some blueberry sauce on the ice cream and put some of the cooked berries on the plate. Then top with fresh blueberries and whipped cream.
Next is Japan for some steamed buns and frushi!
The steamed buns (bao buns) I got from Trader Joe's so easy peasy!
For the frushi you need- sushi rice, cream of coconut, strawberries, cantaloupe, pineapple, raspberries, and sweetened shredded coconut.
Cook the sushi rice. Let sushi rice cool slightly; stir in cream of coconut just a little, maybe like 1/2 a table spoon add more if you are making alot. Set aside to cool to room temperature.
While your rice is cooling add a handful or so of raspberries, a little water and 1/4 cup of sugar in a pan to make a sauce.
Put some shredded coconut on a pan and toast it. Just keep your eye on it so it doesn't burn.
Cut your fruit- Strawberries, hulled and quartered. Cantaloupe, cut into four-inch-long by 1/4-inch-wide rectangles. Pineapple, peeled and cored cut into four-inch-long by 1/4-inch-wide rectangles
Once your rice is cooled, lay one soy wrapper on a flat surface. Place about 1/4 cup sushi rice on the soy wrapper, pressing with moistened fingers to cover the whole sheet. Place one piece each of pineapple and cantaloupe, and four pieces of strawberry in the center of the rice-covered sheet. Starting at one end, fold about 1/3 of the roll up, then roll the sheet into a cylinder, keeping the fruit in the middle. Moisten soy wrapper to seal. Cut into 4 equal pieces. Garnish with raspberry puree, coconut, and whipped cream!
Are you full yet? No? Ok good because we are off to Morocco for some hummus an pita!
Super easy...just bought some hummus and pita chips.
The last country we did was France! Just relax and watch Ratatouille! We were going to do Remy's Hide and Squeak scavenger hunt but I was exhausted. If you did want to play you can print out some Remy's and hide them around your house and yard!
Ok guys that's it! You are now ready to have an awesome Epcot day at home! Guys, this was so fun I almost wasn't missing the parks...almost.
